Our Montbéliarde is a hard cheese with a natural rind. Its recipe is inspired by the European mountain cheeses, such as Comté, Greyer, Bergkaese. We make it in large 10kg wheels and mature it for at least 5 months in our custom build maturing room. Montbéliarde’s rind is regularly washed with brine. The washed rind gives it the distinct ‘mountainous cheese’ flavour. It has a firm texture with occasional crystals, sweet and nutty to savoury and vegetal flavours.

Please note that all our cheeses are made with vegetarian rennet.
