This is also a traditional Dutch recipe. In the Netherlands this cheese is called Komijnekaas. We are adding cumin seeds to our Gouda curd to create this aromatic cheese. After ripening for 3 to 5 months, the refreshing, lemony flavour of the seeds has infused the whole cheese. The result is a wonderfully charismatic cheese. The digestive properties of cumin make Cumin Gouda an ideal after dinner snack.
